Move Over Coffee: How to Make Gooey "Dirty Chai" Cinnamon Rolls

Zain Mansoori

Weekend mornings in our kitchen have a specific routine. Usually, it’s a hot mug of our signature blend and whatever we can find in the pantry to dip into it. But lately, we’ve been experimenting with a new question: What if you didn’t just drink your chai, but baked it into the ultimate comfort food instead?

That is how these sticky, gooey Dirty Chai Cinnamon Rolls were born.

We took the bold, aromatic profile of our organic Rose & Cardamom blend and used it to entirely reinvent the classic weekend bake. Whether you make them as a pure spice-infused pastry or add a splash of espresso to turn them into "Dirty Chai" rolls, this recipe completely transforms your kitchen into a premium specialty cafe.

Why Heavy Cream & Chai Caramel Change Everything

Most standard recipes rely on a basic powdered sugar glaze that just sits flat on top of the pastry. We decided to build flavor from the bottom up. By melting down a homemade stovetop caramel infused directly with concentrated KCC chai, the syrup bubbling up from the bottom completely glazes the dough while it bakes.

Adding a tablespoon of heavy cream directly over each roll right before they hit the oven creates a pillowy, soft structure that melts in your mouth and absorbs the warmth of the cinnamon, nutmeg, and cloves perfectly.

The Recipe: Gooey Dirty Chai Cinnamon Rolls

Yield: 16 small rolls | Prep Time: 40 mins | Rise Time: 2.5 hours | Bake Time: 25-30 mins

Ingredients:

  • The Yeast Base:
    • 3/4 cup lukewarm water
    • 2 1/2 tsp active dry yeast
    • 1 tbsp sugar
  • The Dough:
    • 1/3 cup sugar
    • 1 egg + 1 egg yolk (whisked)
    • 3 cups all-purpose flour
    • 1 tsp kosher salt
    • 4 tbsp melted unsalted butter
    • Heavy cream (reserved for the pre-bake topping)
  • The Spice Ribbon Filling:
    • 1/3 cup unsalted butter (room temperature)
    • 1 cup light brown sugar
    • 2 tbsp cinnamon
    • 1/4 tsp ground cardamom
    • 1/8 tsp ground cloves
    • 1/8 tsp nutmeg
  • The Signature Chai Caramel:
    • 1 cup white granulated sugar
    • 1/2 cup of brewed **KCC chai** (cooled to room temp)
    • 6 tbsp unsalted cold butter
    • A generous pinch of sea salt
  • Velvety Coffee Cream Cheese Frosting:
    • 4 oz room temperature cream cheese
    • 3 tbsp room temperature unsalted butter
    • 3/4 cup powdered sugar
    • 1 tsp vanilla bean paste (or pure vanilla extract)
    • 2 tbsp brewed espresso (Sub for 2 tbsp cooled KCC chai for a 100% tea-focused roll)
    • 1/4 cup premium coffee creamer (adjust to reach your ideal drizzle texture)

Steps to Perfection

1. Proof the Dough: Whisk your lukewarm water, active dry yeast, and single tablespoon of sugar in a small bowl. Let it sit undisturbed for 10 minutes until a thick foam forms on top. In your main mixing bowl, combine the remaining dough ingredients, pouring the foamy yeast mixture in last.

2. Knead & First Rise: Turn the rough dough onto a lightly floured surface and knead with intention for 10 minutes until silky and elastic (a stand mixer works great here too). Place it in a greased bowl, cover tightly, and let it rise in a warm spot for 1.5 to 2 hours until it completely doubles in size.

  • The Prep Window: While the dough rises, brew a concentrated cup of your Karachi Chai Co. blend according to the instructions linked below and let it cool. Whip your room-temperature butter with the brown sugar and spice filling ingredients until it forms a smooth, easily spreadable paste.

3. Build the Stovetop Chai Caramel: Scatter 1 cup of sugar evenly across a pan over medium-low heat. Stir constantly for roughly 8 minutes as the crystals melt down into a smooth, glowing amber liquid. Keep a close eye on it—caramel turns from perfect to burnt in seconds! Drop the flame to low and very slowly pour in your 1/2 cup of room-temp chai. It will hiss and bubble up dramatically; just keep stirring until it calms down into a smooth syrup. Incorporate the cold butter, pull it off the heat, and stir in your sea salt. Let it cool and thicken.

4. Roll and Assemble: Coat the entire bottom of your baking pan with a thick layer of the finished chai caramel, keeping a small amount saved on the side for later. Punch down your risen dough and roll it out into a large rectangle. Spread your spice filling evenly across the surface. Roll the dough up into a tight, uniform log.

  • Baker's Secret: Grab a piece of unflavored dental floss, slide it underneath the log, and cross the ends to slice through cleanly. This keeps the spiral perfectly round without pinching the edges like a knife does. Cut into 12 to 16 pieces.

5. Second Rise, The Cream Secret, & Bake: Arrange your spirals inside the caramel-lined dish, giving them room to grow. Cover with a damp kitchen towel for a quick 30-minute second rise. Preheat your oven to 350°F. Just before baking, pour exactly one tablespoon of heavy cream right over the top of each individual roll. Bake for 25–30 minutes until golden brown.

6. Frost & Drizzle: Beat your room-temperature cream cheese, butter, vanilla, and sifted powdered sugar together with the espresso (or cooled chai) until completely smooth. Gradually stream in your coffee creamer until the icing is perfectly velvety. Frost the warm rolls generously, hit them with a final zigzag drizzle of your reserved chai caramel, and serve immediately.

Founder’s Note: "When we started building this brand, we wanted to show people that high-quality, hand-crushed spices belong everywhere—not just in a traditional mug. Watching these ingredients transform into a bubbling caramel roll is exactly the kind of innovation we love seeing. It completely upgrades the standard weekend morning vibe." — Yousef
